Summer Sausage Recipes

Campfire Sausage & Veggie Foil

Servings: 4-6

1 red bell pepper, sliced
2 ears corn, husked & cut into 2" sections
1 large yellow onion, coarsely chopped
4-5 small red potatoes, cut into bite-sized pieces
1 medium zucchini, sliced
12 oz Hunters Reserve Wild Game sausage, sliced
5 T olive oil
1 T dried oregano
1 T dried parsley
1/2 t garlic powder
1 t paprika
Salt & pepper to taste

Preheat the grill or start the campfire to create embers.

In a small bowl, combine the olive oil, oregano, parsley, garlic powder, paprika, sale & pepper.

Add veggies & sausage to the seasonings and toss well.

Place 2 pieces of tin foil down, and put a generous amount of the sausage & veggie mix in the center. Fold up the inner foil, then the outer foil, to create a secure encasing.

Place on grill or in coals of campfire for 15-20 minutes until veggies are crisp tender.
